Turkey Wet Brine

 1 gal water
 ½ cup kosher salt
  cup brown can sugar, packed
 2 cups onion, cut into 1/2-inch dice
 16 cloves garlic, cut in half
 2 tsp black peppercorns, whole
Additional Aromatic Flavors (Optional)
 star anise
 all spice
 clove
 rosemary
 oregano
 orange peel
 lemon zest
 apple juice
 tarragon

In a small stockpot, combine all ingredients.

Bring to a simmer to dissolve salt and sugar.

Remove from heat and cool to room temperature.

Prepare turkey by removing the giblets and pat dry with paper towels.

Place the turkey in a brine bag or large stock pot.

Cover the turkey completely with brine.

Refrigerate 12-24 hours.
