Grilled Orange Chicken Banh Mi Sandwich

Banh Mi Ingredients
 8 3" pieces French bread, with medium size V shaped wedge cut out of side
 8 boneless skinless chicken thighs
 salt and pepper
 1 recipe orange glaze (see below)
 butter
 1 recipe vegetable slaw
 2 green onions, cut 3" pieces
 ½ bunch cilantro
 1 jalapeno, sliced
 Sriracha chili hot sauce
Orange Chicken Glaze Ingredients
 ½ cup honey
 ¼ cup orange juice concentrate
 ¼ cup rice vinegar
 3 tbsp soy sauce
 2 tbsp brown sugar
 1 tsp grated ginger
 2 cloves garlic
 red pepper flakes
Vegetable Slaw Ingredients
 1 carrot, julienned
 1 daikon radish, julienned
 ¼ cup rice vinegar
 1 ¾ cups sugar
Banh Mi Method

Preheat grill half on high and half on medium.

Season chicken with salt and pepper.

Grill over high heat until caramelized. Then move chicken to cooler area of the grill and cook until chicken reaches 165 degrees.

Slice chicken and place in glaze and toss.

Butter the bread and place chicken inside. Top with vegetable slaw, green onions, fresh cilantro, jalapeño slices and Sriracha sauce.

In a small bowl, whisk together all ingredients.
