The most expensive peppercorn, there is more time and labor involved in its production. White peppercorns start out the same way as black peppercorns, but have to be soaked in water to remove the outer shell of the berry. The white peppercorn gives us the richest pepper flavor with the “bite” of the black. It also allows for a pepper flavor without the visual dark pepper color, so it has traditionally been the choice for light colored sauces.
