The most expensive spice, saffron is the stigma of a violet colored crocus which blooms for only two weeks in autumn. Each flower has 3 stigmas and it takes from 100-200,000 stigmas to make a pound of saffron. Our Spanish Coupe is a premium grade of Spanish saffron with a 240 color rating. Called for in bouillabaisse and paella, saffron’s beautiful golden color and honey-like flavor makes any dish very distinctive. Saffron is now a totally cultivated crop and can no-longer be found in the wild. Although vibrant red in color, saffron turns a dish yellow in color.
