Lemon grass is a tropical grass resembling a spring onion but having a sweet-scented lemon flavor similar to lemon balm. Widely used in Southeastern Asia cuisine, lemon grass goes particularly well with fish and chicken and there are countless Thai and Sri Lankan recipes exploiting this combination. It can be an ingredient in the sauces and marinades for Indonesian sate and it is used extensively in the Indian-derived beef and lamb curries of Burma and Malaysia, as well as with Thai stir-fried beef and salads.
