It is traditionally married with other strong flavors, especially fish where it performs beautifully with any grilled fish including trout, salmon, or mackerel. The Italians prefer it in sausages, the French in their court bouillon, and the English present it in almost all fish dishes. Fennel is described as having a sweet aromatic flavor and aroma similar to anise, a licorice-like flavor, but less intense. It has nuances of menthol with musty and green undertones.
