BEGINNER’S GUIDE TO KITCHEN SCIENCE
Using science in the kitchen to achieve better tasting food and more consistent results doesn’t have to be complicated or require a complete overhaul of your kitchen tools. More often than not, it is simply a different way of thinking about the cooking process we use and making intentional choices that allow us to evaluate our results. We will demonstrate some of the common and practical reactions in the kitchen (cooking meat, baking quick breads, making sauces) and the ingredients and techniques that cause them. We will touch on how we measure in the kitchen and the process we use to test and balance flavors.

MASTERING SAUTÉ & SAUCE
Find out how delicious “quick and easy” can be with this hands-on seminar. We’ll teach you how to sear – a simple technique that builds flavor – as well as how to create a pan sauce for a quick, delicious and impressive dinner. Then, we will show how using a stainless-steel pan the correct way produces amazing results in creating a crispy flavorful exterior and a soft juicy interior. Many of us have learned that we need to make sure our steaks rest after cooking but most of us don’t do it correctly. We will explain the resting process and how to bring the steak back up to temperature if it rests for too long. All this without sacrificing taste, tenderness and texture. Finally, we will discuss the benefits of last minute additions to your steak and why we use different salts, acids and fats to create that memorable meal.
